Ham & Kale Soup

After the holidays, I always have so much leftover ham. I wanted to use it for something new, so I came up with this soup! It’s yummy & top 8 free too! Enjoy!

Ham & Kale Soup


-3 tbls olive oil

-1 medium yellow onion, diced

– 1 tsp black pepper

-1 tsp salt

-2 cups ham, diced

-2 cups carrots, sliced

-1 cup celery, diced

-4 cups chicken stock

-1 tsp turmeric

-1/4 tsp red pepper flakes

-1 tsp hot sauce

-12 oz bag chopped kale


1. In a large Dutch oven or stock pot, heat the olive oil on medium heat for 1 minute. Add onion, salt, and pepper. Stir and heat on medium, until onion is translucent or about 3 minutes.

2. Add in ham, carrots, celery, chicken stock, turmeric, red pepper flakes, and hot sauce. Stir and bring to a boil.

3. Reduce heat and add kale. Simmer on low for 20 minutes or till the vegetables are tender. Serve & enjoy!
