Cucumber Tomato Salad

Summer salads are great for parties!  Summer salads that have a vinagirette dressing are great for food allergies because most of them avoid the top allergens, including dairy and eggs.  This salad is tasty and simple and great for those hot days.  If you garden, tomatoes and cucumbers are almost in season, so take advantage of this recipe and use up some of the produce from your garden.  Enjoy!

Cucumber Tomato Salad

Ingredients

-1 english cucumber, quartered and cut into 1″ pieces

-3 tomatoes, quartered and cut into 1″ pieces

-1 yellow onion, sliced into 1/2 ” pieces

-1/3 cup white vinegar

-1/3 cup water

-2 tbls sugar

-1/2 tsp salt

-1/2 tsp pepper

 

Directions

  1. Place the cucumbers, tomatoes and onions in a large bowl.
  2. Mix the white vinegar, water, sugar, salt and pepper together in a small bowl or jar.
  3. Pour the dressing on the cucumber mixture.  Stir.  Let sit for one hour or so in the refrigerator.  Serve and enjoy!
