If you are like me, you may have a ton of ham, left over after a holiday. I have a few recipes in my arsenal to use up my leftover ham, many of them soups, but this one is great for breakfast (lunch or dinner too)! This is a hash using sweet potatoes, ham, and onions! So simple! It’s free of the top 8 allergens too! Enjoy!
Ham & Sweet Potato Hash
-2 tbls olive oil
-1/2 tsp pepper
-1/2 tsp salt
-1 medium yellow onion, diced
-2 large sweet potatoes, peeled and cut into 1/2″ cubes
-2 cups ham, cut into 1/2″ cubes
- In a large skillet, add the onion, olive oil, salt, and pepper. Stir and heat on medium heat till translucent, about 3-5 minutes.
- Add in sweet potatoes and cook for about 5 minutes or until tender, stirring occasionally.
- Add in ham and stir. Heat ham through, about 3 minutes. Enjoy!
