Balsamic Chicken

We love chicken, but let’s be honest; chicken can get boring after awhile.  This is one of my go to recipes, to switch up the same old chicken recipes that I fall into the habit of making.  It’s delicious and only has a few ingredients.  It’s top 8 free and I hope you can add it to your chicken recipe repertoire.  Enjoy!


Balsamic Chicken


-2 chicken breasts, cut in half to make thinner

-1/4 tsp salt

-1/4 tsp black pepper

-1/4 cup olive oil

-1 cup balsamic vinegar

-1 cup chicken stock

-2 tbls flat leaf parsley, finely chopped for garnish



  1. Season chicken breasts with salt and pepper.  Put olive oil in a frying pan and heat on medium heat for 1 minute.  Add chicken breasts and brown on each side, for about 2 minutes per side.
  2. Add the balsamic vinegar and bring to a boil.  Reduce heat to low-medium, to a simmer, until the vinegar is reduced by half.
  3. Add the chicken stock and stir.  Continue simmering for about 10 minutes, until the chicken is cooked all the way through.
  4. Remove the chicken to a platter and boil sauce to thicken, about 5 minutes.  Once the sauce is thick, then pour the sauce over the chicken.  Garnish with parsley and enjoy!

P.S. These are served with roasted carrots.  Drizzle the carrots with olive oil and sprinkle the carrots with a little salt and pepper.  Toss to coat.  Roast in the oven at 400F for 20 minutes!
