A simple, quick pasta? Yes, please! This is a very easy recipe and great for weeknights too! It is free from dairy, nuts, and soy too. You can easily substitute the noodles with a gluten free option as well. Enjoy!
Chicken Asparagus Pasta
-3 tbls garlic olive oil (& a little more for serving)
-1/2 tsp salt (& a little more for serving)
-1/2 tsp pepper (& a little more for serving)
-2 chicken breasts, cut into 1″ pieces
-1 lb asparagus, trimmed & cut into 1″ pieces
-1 12oz bag lemon pepper pappardelle noodles (or plain pappardelle noodles or gluten free noodles)
- In a large dutch oven, heat the garlic olive oil on medium heat. Add chicken and season with salt and pepper. Cook until chicken is cooked through, about 5 minutes.
- Add asparagus to the chicken in the dutch oven. Cook until tender, about 2 minutes.
- Cook noodles per directions on the bag. Add cooked noodles to the chicken/asparagus mixture.
- Serve and drizzle with garlic olive oil and sprinkle with salt & pepper. Enjoy!
