Still snowing here, so it’s time for more soup!! This is a delicious soup that is fast and easy!
Basically, I should call this my Trader Joe’s soup because most of the ingredients come from there! It has tons of veggies & is top 8 free! Most of the vegetables are frozen, which makes this super easy to make and great to make in the winter, when most vegetables are not in season. It has a little spice, in the form of red pepper flakes and some turmeric, which is a great anti-inflammatory. I hope it keeps you warm! Enjoy!
Chicken Sausage Soup
-2 tbls olive oil
-1 tbls garlic olive oil
-1 medium yellow onion, diced
-1/2 tsp salt
-1/2 tsp pepper
-12 oz. pre-cooked sweet Italian chicken sausages, sliced
-1 cup carrots, sliced
-1 14.5 oz can fire roasted tomatoes
-8 cups chicken stock
-1 cup frozen chopped green beans
-1 cup frozen broccoli florets
-1/2 cup frozen riced cauliflower
-1/2 cup frozen tricolor bell peppers
-1/4 cup frozen chopped spinach
-1/4 tsp red pepper flakes
-1/4 tsp oregano
-1/2 tsp garlic powder
-1/2 tsp turmeric
- In a large dutch oven, heat olive oil, garlic olive oil, onion, salt and pepper on medium heat, for about 5 minutes or until the onion is translucent.
- Add in chicken sausage and sauté on medium heat for 2 minutes or until lightly browned.
- Add in the carrots, fire roasted tomatoes, chicken stock, green beans, broccoli, cauliflower, bell peppers, spinach, red pepper flakes, oregano, garlic powder and turmeric. Bring to a boil.
- Once to a boil, reduce heat to low and simmer for 30 minutes or until vegetables are tender. Enjoy!
