Chicken Sausage Soup

Still snowing here, so it’s time for more soup!!  This is a delicious soup that is fast and easy!

Basically, I should call this my Trader Joe’s soup because most of the ingredients come from there!  It has tons of veggies & is top 8 free!  Most of the vegetables are frozen, which makes this super easy to make and great to make in the winter, when most vegetables are not in season.  It has a little spice, in the form of red pepper flakes and some turmeric, which is a great anti-inflammatory.  I hope it keeps you warm!  Enjoy!


Chicken Sausage Soup


-2 tbls olive oil

-1 tbls garlic olive oil

-1 medium yellow onion, diced

-1/2 tsp salt

-1/2 tsp pepper

-12 oz. pre-cooked sweet Italian chicken sausages, sliced

-1 cup carrots, sliced

-1 14.5 oz can fire roasted tomatoes

-8 cups chicken stock

-1 cup frozen chopped green beans

-1 cup frozen broccoli florets

-1/2 cup frozen riced cauliflower

-1/2 cup frozen tricolor bell peppers

-1/4 cup frozen chopped spinach

-1/4 tsp red pepper flakes

-1/4 tsp oregano

-1/2 tsp garlic powder

-1/2 tsp turmeric



  1. In a large dutch oven, heat olive oil, garlic olive oil, onion, salt and pepper on medium heat, for about 5 minutes or until the onion is translucent.
  2. Add in chicken sausage and sauté on medium heat for 2 minutes or until lightly browned.
  3. Add in the carrots, fire roasted tomatoes, chicken stock, green beans, broccoli, cauliflower, bell peppers, spinach, red pepper flakes, oregano, garlic powder and turmeric.  Bring to a boil.
  4. Once to a boil, reduce heat to low and simmer for 30 minutes or until vegetables are tender.  Enjoy!
