Ground Turkey Vegetable Soup

It’s snowing here, which always makes me want soup!  I love soup!!!!!  It’s a great, hearty meal.  It also can easily feed a family!  This one is super easy and top 8 free!!  I hope you enjoy it!


Ground Turkey Vegetable Soup


-1 lb. ground turkey

-1 tbl olive oil

-1 medium yellow onion, diced

-1/2 tsp salt

-1/2 tsp pepper

-2 large carrots, sliced

-2 celery stalks, sliced

-6 cups chicken stock

-1 14 oz. diced tomatoes

-1 6 oz. can tomato paste

– 1 cup chopped frozen green beans

-3 garlic cloves, minced

-1/4 tsp dried thyme

-1/4 tsp dried oregano

-1 bay leaf



  1. Brown the ground turkey in a dutch oven, seasoning with the thyme and oregano, then set aside.
  2. In the dutch oven, add 1 tablespoon of olive oil.  Add the onion, salt, and pepper and sauté on medium heat for 3 minutes.  Then add the celery and carrots and sauté for 5 minutes.  Add the garlic and sauté for 1 minute.
  3. Add the chicken stock, diced tomatoes, and tomato paste, stir until well blended. Add the green beans and browned turkey.  Stir until well blended. Add the bay leaf. Bring to a boil, then turn down the heat and simmer for 30 to 35 minutes or until the vegetables are tender.  Remove the bay leaf and serve.  Enjoy!
