Allergy Friendly Turkey Meatloaf

Oh meatloaf, so yummy, yet so not pretty!  That would be my ode to meatloaf!  Hehehe!  In all seriousness, meatloaf is a great meal for the colder months!  It’s full of protein, comforting, and reminds us of grandma’s cooking.  A lot of times meatloaf has dairy in it, which is a very common food allergen.  So, I set out awhile ago to come up with a recipe that is free of dairy and I have.  After many trials, that were just ok, using water or other things, I came across a great product that gave me the creaminess and smoothness that I needed for my dairy free meatloaf!

That product is Ripple Unsweetened Original Pea Milk.  It has a great texture, smoothness, and neutral flavor to it, which makes it a great milk substitute!!  You will see me use it in a lot of my recipes!  This is not an ad by the way, I just really like it!!

My Allergy Friendly Turkey Meatloaf is based on an old farm recipe that I have been making for about 15 years.  I stumbled upon this recipe when I was a teenager to make for my family because my parents were both working and I would make dinner.  Also, because I have been cooking since I was literally 5 years old!  My grandma sent me my first cookbook then and the rest is history!  Did anyone else make their first roast chicken at 5 years old?  It was called yummy roast chicken and it was so yummy!!!  Although, I remember I stuffed the butt with celery and carrots instead of the neck cavity!  What, I was five?  Hahaha!! Ahh, it still makes me chuckle everytime I clean a chicken or turkey!

Anyway, I digress.  Why is it that farm cookbooks have some of the best comfort food???  The basis for this recipe comes from a farm cookbook.  This recipe is unique in that it uses bread, instead of bread crumbs.  I find that it keeps the meatloaf very moist and gives it a smoother texture than bread crumbs.  Also, one of my special touches, is a glaze I put on top to add an extra dash of flavor!  I have made this meatloaf so many times and have made so many changes, that I feel like I have perfected it at this point.  I hope you get a chance to make it too!!
